iTunes has worked in wine for about 10 years, but the phone/tablet will never get system updates via that iTunes, updates only come down in Windows/Mac
I believe iTunes in a Windows VM on a Linunx host cannot even get updates for hardware
If you can get updates over mobile data than I believe most of iTunes will work “fine”, DRM video might have issues
